Tropical Chex Mix Party Mix Recipe

I have an awesome new recipe for a Tropical Chex Mix for your holiday party! This would be perfect for New Year's Eve! I served mine for Christmas Eve and it was a hit! Everyone wanted a baggie to take home and because I made extra, I was able to do just that.
Here is what was in the recipe:
8 cups of Rice Chex Cereal
1 cup shredded coconut
1 cup dried banana chips
1 package tropical dried fruit mix (7 or 8 oz size)
1 jar of macadamia nuts (3 oz size)
3 tablespoons of melted butter
1/4 cup packed brown sugar
1/4 cup frozen orange juice or pineapple juice (thawed)
Now, I deviated from the recipe slightly. To make more, I used the whole box instead of the 8 cups and then of course, I had to use more butter, sugar and orange juice. I didn't use the pineapple juice because I knew my crew would buck at that. Heck, I wasn't even sure they would eat it because of the coconut, but I decided not to tell them it had it in there until they tried it! I also used the whole bag of coconut and added pecans to my recipe because they are crazy about nuts!
The recipe is really simple to make. It takes about 15 to 20 minutes and all you do is mix everything together and then I placed it all on cookie sheets and then took the liquids and poured over the mix and then baked it on 300 degree's for 30 minutes. If your oven is like mine, you might want to check it after 15 minutes and stir everything up so it doesn't stick to the pan.
Once you take it out of the oven, then place on waxed paper and let it cool down for about 15 minutes and then you can place in an airtight container or baggies to hand out to your guests as they are leaving, which is what I did.
Now, if you make a big batch like I did, I used the whole bag of coconut and just about the whole can of Orange Juice along with a good bit of butter and brown sugar. But I guessed at all of that part and so will you based on what your family likes. I knew I had to have enough sweetness in there or they wouldn't even attempt to try it but your family may be different.
Like I said, I didn't tell them it had coconut in it and they all LOVED IT! Then when I told them it had coconut in it, they were flabbergasted. They never even suspected it because of the baking in the oven and the brown sugar, it makes everything kind of gooey and then it hardens when it cools down, so it all stuck together and they never knew it. They all loved it so much, they asked for baggies to take some home and I have a hard crew to sell to, so I think yours will love it too! You can use pineapple juice if your family prefers it to orange juice. It is after all, a Tropical Party Mix!
Publix provided the recipe and all the ingredients that I used in the Chex Mix Party Mix, so I wanted to make sure I thanked them from my family. I just proved to them that sometimes it's the thought of something instead of the actual taste that they are afraid of. Some of them had never tried some of the ingredients, they just assumed that they would not like them.
Do you have someone like that in your family? If you do, then make the recipe and don't tell them what is in it until after they have tried it. Hopefully, they will love it. I even have some really hard sellers in my crowd so I was holding my breath the whole time wondering just how many of them would say they hated it. Not a one! They all came back for seconds and thirds and took some home!
So, a big Thank You goes out to Publix for that awesome recipe and for providing the ingredients. I just love shopping at Publix! Stop by and check out what all they have on Sale for your New Year's Eve party or even if it's just the two of you, which is what is happening at my house that night. I think after the party at my house on Christmas Eve, I am ready for some quiet time!
