Don Sabrosa Roasted Garlic Salsa Sponsor Spotlight Giveaway


 
It's been a little while since you heard me talking about Don Sabrosa's salsa so I thought it was time to debut a new flavor from his salsa line called Roasted Garlic. You can get it in three flavors, mild, medium or hot.  
 
By now, everyone knows about my new condition, Acute Gastritis, so I asked Don to please make sure he sends at least one mild and he did and then he sent Mike a hot one. That way we both get what we want. I haven't eaten Mexican in over 2 years now.  Gosh, I sure do miss it!
 
It's not just the Gastritis but I also have I.C. (chronic bladder pain) and it's also brought on by spicy foods, caffeine, chocolate but most importantly, anything with potassium in it. So, now I have to read labels like crazy for potassium plus, my food just got limited even further by the Gastritis.
 
 
Anyway, I was able to get a few bites of the Mild Roasted Garlic down before I had to call it quits. Very good flavor and just the right amount of Garlic! They sure do know how to mix up a mean salsa (whether it's mild or hot)!
 
Here is one recipe that we used from Don's site for the Mild so I could have a little bit and not hurt myself:
 
Enchilada Bake

Try this zesty dish for an alternative, meat-less dinner option your family will sure to love.
 
 
Ingredients:
  • 1 (16 ounce) can fat-free refried beans
  • 1/2 ripe avocado, diced
  • 1/2 cup scallions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 12 cup of Don Sabrosa Salsa
  • 8 whole grain or corn tortillas
  • 1/2 cup low fat cheddar cheese
  • 1 (10 ounce) can enchilada sauce
  • Dash of cinnamon
  • Dash of chili powder
  • Sea Salt and freshly ground white pepper to taste
  • Toppings: Nonfat sour cream, chives and additional Don Sabrosa Salsa
 
Directions:

Preheat oven to 425 degrees. Coat a pie pan with cooking spray. In a medium bowl, combine beans, avocado, scallions, salsa, cinnamon, chili powder, sea salt and pepper; mix well.  Spread 4 Tbsp. enchilada sauce over the bottom of the prepared pie pan. Place 1 tortilla over sauce and top with 3 Tbsp. bean mixture and sprinkle with cheese. Continue layering sauce, tortillas, bean mixture and cheese. Spread the remaining enchilada sauce on top of the final tortilla and sprinkle with fresh cilantro. 


 

Cover the pie pan with aluminum foil sprayed with cooking spray placed sprayed side down atop the tortilla stack. Bake for 30 minutes or until completed heated through. Slice into pieces and serve with a dollop of sour cream, a sprinkle of chives and your favorite Don Sabrosa Salsa.  
 
Doesn't that sound awesome! I love them more than anything and by watching what I put in there like I deleted the white pepper and the chili peppers and went a little easy on the enchilada sauce, I was able to make one small one for myself and then the regular recipe for Mike. We both loved it! Mike was happy he got to eat his favorite and so did I.
 
 
Mike's favorite way of eating salsa is with tortilla chips so he is really easy to please, he will even go so far as to put it in his chili because I don't make it hot, but gosh, I have to eat too! And I will be darned if I am going to start making 2 separate meals all the time. So, he adds his to his bowl or plate depending on what he eats. 
 
But, he also loves burritos and tacos a lot and this picture on Don Sabrosa's site got him to thinking and so he tried to make something similar but it didn't quite turn out like this picture, but I was able to save his meal by getting the pocket flat breads and then he was able to put all his ingredients inside and was a happy camper!
 
 
There are so many things you can use Salsa for in the summer and it makes a perfect picnic food because of Mike's favorite, a lot of people like the same thing, just chips and salsa and they are fine.  Which is the main reason I decided to use Don Sabrosa's salsa's in the Summer Splash Giveaway Event. What better way to celebrate Summer than to have a lot of chips and salsa around?
 
I know my Mike can go thru several bags of tortilla chips in a few weeks. I kid you not. That is his number one thing he reaches for when we sit down to watch a Movie or TV for that matter. He associates watching TV or a Movie with eating.
